Stir Fried Potatoes with Minced Meat


This is our family dish, My brother and I never fail to finish this dish whenever my mum cooked it.

Hence, I tried to cook it and there I got it. I was reminded of my mum's cooking and the homely dishes which I used to eat when I was young. The dish is also simple to cook with little ingredients and yet it is so flavourful that you can eat it with plain rice or porridge.


Ingredients - Serves 2

Food Ingredients:
- 1 potato, sliced thinly into sticks
- Minced pork
- 2 garlic cloves, chopped

Seasonings for the sauce (Mix well before cooking):
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp oyster sauce
- dash of pepper
- 1/2 cup of water

Cooking Directions

1) Marinate the minced meat lightly with some light soya sauce, dash of pepper and pinch of salt. Leave in fridge for about 30 minutes.

2) Stir fry garlic in the heated oil till fragrant. Add minced meat and stir fry.

3) When the minced meat is almost brown, add in the potatoes and mix well with the meat.

4) Add in the sauce and mix well with the meat and potatoes. Reduce to low heat and simmer for about 7 minutes.

5) Garnish with green onions if desired.

Additional notes:

1) I prefer my potatoes to be crisp and of crunch texture. If you prefer yours to be softer, let it simmer in the pot for about 10 minutes.
